On this episode of the Food About Town podcast, Brian van Etten and Christian Simeone came over to the studio to talk about the first few months of The Playhouse/Swillburger. We talked through what Swillburger is all about and dove into some of the discussion surrounding the restaurant.
I’m going to go ahead and put a PARENTAL ADVISORY on this episode since it was chock full of cursing which I enjoyed immensely. We spent some time going through local sourcing, cooking techniques and what makes Swillburger stand out. Of course we talked about the background of Brian and Christian and why they decided to be in the ROC.
We also addressed some of the negative talk that happened through the Kickstarter process and tackled the comments from Reddit and other reviews. We had a bit of fireworks there and Brian went off a bit on some of the stuff he has read which I found entertaining and a window into the eyes of a restaurant owner who went through a difficult renovation process. Brian also talked about transparency with his customers and the growing pains of having a popular spot.
