New Opening – Stingray Sushifusion Truck

I noticed a new food truck at M Design on Emerson St today and went over to find out what the newest truck on the scene was. A bright blue truck emblazoned with Stingray Sushifusion was sitting out front ready to be picked up by their new owners and soon to be found on the streets of Rochester. According to their Facebook page, Stingray will be “sushi fusion with a Latin sting” and the menu looks promising with a selection of classic rolls and a few Latin influenced rolls and appetizers.

Pete Causyn, owner of Macarollin’ and part of M Design, told me that Stingray should be up and rolling within the next few weeks so keep an eye out for them on the streets!

  • This sounds awesome! Latin influence sushi sounds like a combo that’ll be right up my alley, so I can’t wait to give ’em a try!

    I hate to ask it, but is that a typo in their web address at the bottom of the truck in the first picture? Or are they really spelling their url “fushion” ? Neither address seems to be up and running at the moment.

    • Nice catch Adam! I’ll stop over after they’re back from downtown today and alert them of the potential issue. Sure doesn’t look right!

    • Chris, this is Jose Veras, one of the co-owner of Stingray Sushifusion Truck. Thank you for picking up on our new Sushifusion Truck and reporting on its launching. I just discovered your site late last night and saw your posting on our truck. My son, head chef Radhames Veras and I are very excited to introduce our Rochester clientele a sushi menu with both traditional and Latin influenced fusion sushi. Although we were not able to open our truck’s door or “window” to the public on the 29th at the Public Market Food Truck Rodeo, we are open now serving at various locations. Tonight we will be around the Charlotte area near Nola’s staring at 10:00 pm until 1:00am. And of course, we will be at the next Public Market Food Truck rodeo this month. We will be more than happy to talk to you and expand on our culinary concept behind Stingray Sushifusion menu.
